February's harvest of the month is Maine Root Vegetables! Root crops grow below the ground and have been eaten widely for more than 5,000 years! Did you know that the carrot we know is a decendant of a wild plant found in what is now Iran and Afghanistan. The root of the carrots's wild ancestor was a dark purple, almost black color.
